2 lb Fresh or Frozen Blueberries
1/4 cup Sugar
1/2 cup Olive Gourmet Wild Blueberry Balsamic Vinegar
1 loaf sliced bread of your choice
2 lb Cream Cheese
4 oz Black Truffle cheese, grated (Trader Joe’s, Whole Foods, maybe AJ’s)
2 Tbsp heavy cream
1 pint Fresh Blueberries (for garnish)
2 Tbsp Olive Gourmet White Truffle Oil
2/3 cup Olive Gourmet Butter Olive Oil
Place blueberries, sugar and balsamic vinegar in a saucepan and cook over medium heat until reduced to a jam-like consistency.
In a stand mixer whip the cream cheese until light and fluffy. Slowly whip in the heavy cream & truffle oil. Gently fold in the grated cheese. Check seasoning, Add salt and pepper if you choose.
Lay the bread out on a work surface. Spread 2-3 tablespoons of the truffle cheese mixture on each slice. Top with 2-3 tablespoons blueberry/balsamic mixture and top with another slice of bread.
Brush both sides with Butter flavored oil; pre-heat a waffle iron or Panini press. Cook the sandwiches until brown. Let cool slightly and cut in half of the diagonal.
Place on a serving plate and drizzle with additional Wild blueberry Jam and garnish with fresh blueberries.
