Apple & Red Quinoa Salad

2 cups Red quinoa, cooked
5 oz. Arugula (or greens of your choice)
2 Fuji apples, julienned
2 Tbsp. Red onion, diced
1/2 cup toasted sunflower seeds
4 oz. Feta cheese, crumbled
2 Tbsp. honey
1 tsp. Dijon mustard
1/2 tsp. sea salt
1 cup Olive Gourmet Cara Cara Orange Vanilla White Balsamic
1/4 cup Olive Gourmet Blood Orange Ultra Premium EVOO

Prepare quinoa according to directions on box. Allow quinoa to cool completely. Toss quinoa with apples, red onions and sunflower seeds. Whisk together mustard, salt, honey, balsamic and olive oil. Toss quinoa mixture with dressing. Refrigerate mixture for at least 45 minutes. Immediately before serving, toss with greens and feta cheese.
