Zucchini, medium sized
Olive Gourmet Extra Virgin Olive Oil, traditional or your favorite flavor…
Garlic powder (if not using garlic EVOO)
Grated Parmesan, Mozzarella or Parmigiano-Reggiano
Panko seasoned bread crumbs
Salt & pepper to taste
Wash, cut the ends off and slice the zucchini in half. Take a thin slice off the bottom to keep the zucchini stable. Brush with olive oil and top with garlic or garlic powder if desired. Top with sliced tomatoes, salt and pepper to taste. Sprinkle cheese and bread crumbs over the top.
Bake 375º for 20 to 30 minutes until tender.
