1⁄2 cup freshly squeezed grapefruit juice 1/2 cup Olive Gourmet Grapefruit White Balsamic 2 tablespoons Olive Gourmet 18-Year Traditional Aged Balsamic
2 tablespoons brown sugar
4 (6 ounce) salmon fillets
1⁄2 teaspoon salt
1⁄2 teaspoon pepper
2 grapefruits, sliced 1/2 " thick, for garnish (optional)
Combine grapefruit juice, balsamic vinegars and brown sugar in medium saucepan. Boil gently over medium heat until reduced by half, approximately 15 minutes. Keep warm.
Season each side of salmon fillets with salt and pepper. Grill salmon until just done in center, about 5 minutes per side, depending on thickness of fillet. Brush salmon with grapefruit glaze during grilling and just before removing from grill.
If using, place 2 grapefruit slices on serving plate and top with cooked salmon fillet. Drizzle remaining glaze and serve immediately.
