2 packages (30 total) mini Phyllo cups
3/4 cup whipping or heavy cream
3 0z cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla
1/2 cup Olive Gourmet Raspberry Balsamic
30 Fresh Raspberry
Over medium heat in a small sauce pan, reduce the balsamic by 1/3. Cool--it will thicken as it cools so don't over reduce it!
Remove the tray of phyllo shells from the boxes. Beat the whipping cream until stiff. In a separate bowl mix the cream cheese. powdered sugar and vanilla. Gently mix the cream cheese mixture and the whipped cream together. Spoon mixture into phyllo shells. Top with fresh raspberry's. Keep refrigerated. Drizzle with Raspberry Balsamic reduction just before serving.
