Cilantro and Roasted Onion Grilled Chicken with Aioli

Four (4-5 ounces ea.) chicken breasts, trimmed
1/2 cup  Olive Gourmet Cilantro & Roasted Onion Olive Oil
1/4 cup Sicilian Lemon White Balsamic Vinegar
1/2 lime, juiced
pinch sea salt
freshly ground pepper

AIOLI
5 oz plain Greek yogurt
1/4 cup Olive Gourmet Cilantro & Roasted Onion Olive Oil
2 cloves garlic, very finely minced
1/2 lime, juiced
pinch sea salt

  1. To prepare the chicken, place chicken breast in a flat dish or sealable plastic bag.  In a small bowl, mix the Cilantro & Roasted Onion Olive Oil, Sicilian Lemon Balsamic, lime juice, salt, and pepper until well combined.  Pour over the chicken and turn to coat both sides.  Marinate for at least 30 minutes.
  2. Once the chicken has marinated, preheat the grill to medium heat.  Place chicken breasts on grill and cook for 5 to 7 minutes, or until golden brown.  Turn the chicken and continue cooking for another 5 to 6 minutes or until completely cooked.  Remove from heat; let rest for 3 to 4 minutes. Drizzle aioli over chicken and serve.
  3. To prepare the aioli, whisk together the yogurt, Cilantro & Roasted Onion Olive Oil, garlic, lime juice, salt, and pepper in a small bowl.  (Or, blend all ingredients together in a food processor.) Refrigerate until ready to serve.
