1 15 oz. can black beans (rinsed & drained)
1 Cup frozen corn kernels, thawed
½ Cup chopped red bell pepper
½ Cup finely diced ripe tomato
8 small green onions- chopped (including some green)
½ Cup chopped fresh cilantro
2 TBSP Olive Gourmet Persian Lime EVOO
2 TBSP Olive Gourmet Jalapeño Balsamic Vinegar
2 TBSP Olive Gourmet Chipotle or Cayenne Chili EVOO
½ tsp salt
½ tsp ground cumin
Mix all ingredients well. Refrigerate overnight to blend flavors.
