6 to 8 new red potatoes, scrubbed and cut into bite sized peices
6 slices diced and cooked lean bacon
1-1/2 to 2 cups Haricot Verts (slender green beans)
2 Tbsp. Olive Gourmet Tuscan Herb Extra Virgin Olive Oil 2 Tbsp. Olive Gourmet Sicilian Lemon White Balsamic 3/4 Tbsp. good quality mayo
salt & fresh cracked pepper to taste
Boil potatoes until fork tender but not breaking apart.
Steam green beans until tender but still vibrant green and not overcooked. Whisk together EVOO, balsamic and mayo. Combine all ingredients, season and serve at room temperature.
